Italian Vegetable Meatball Soup

As we well know, soup is a great way to clear out the produce drawer.   The more vegetables in the pot, the better the flavor of the soup.  So do not skimp and be creative.  This recipe originally called for only celery, carrots, potatoes and onions.  I omitted the potatoes, but added diced tomatoes and zucchini – after all it is suppose to be Italian and I always have both on hand for some reason.


  • 1 pound ground beef
  • ½ cup Parmesan cheese – freshly grated
  • 2 tablespoons dried parsley (or 4 tablespoons fresh)
  • 1 whole egg
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1/4 teaspoon ground oregano


  • 4 tablespoons olive oil
  • 6-8 cups beef broth
  • 1 can of diced tomatoes
  • 1 cup water
  • 2 tablespoons tomato paste
  • 1 onion – chopped
  • ½ cup carrots – chopped
  • ½ cup celery – chopped
  • ½ cup zucchini – chopped
  • ½ cup shredded cabbage

Bouquet Garni

  • 2 tablespoons dried parsley
  • 2 bay leaves
  • 1-2 teaspoons peppercorns

Chop onions, celery, carrots and any other vegetables . . .

Combine ground beef, Parmesan cheese, 2 tablespoons dried parsley, egg, garlic powder, pepper and oregano.

Mix with hands and form small meatballs. Refrigerate for ½ hour.

In a cheesecloth or small “bouquet garni bag” place 2 tablespoons dried parsley, bay leaves and peppercorns. Securely tie.

Isn’t this the cutest bag?  One year my mom . . . oops, I mean Santa, stuffed my stocking which lots of cooking stuff and these are one of my favorites.

Heat olive oil over medium heat in a stock pot and add meatballs and slightly brown.  They will fully cook in the soup later on.

Remove to plate and set aside.

Add stock, water, diced tomatoes, salt, tomato paste and herb bag to pot. Bring to boil and simmer 30 minutes.

Add onions, carrots, celery and zucchini and simmer 15 minutes – remove herb bag.

Add meatballs and cabbage and bring to boil and simmer for 10-15 minutes.

Serve with grated Parmesan cheese sprinkled on top if desired.
