Grilled Flank Steak

Fortunately, we can pretty much grill outdoors anytime of the year.  But of course, the day I marinated my flank steak, it actually was raining, which is big news around here.  Turn on the news and there will be a deluge (HA HA) of stories about precipitation — and it’s not like we had a hurricane, it was just a nice steady rain most of the day.  Now, don’t get me started with LA drivers in the rain.

So it was time to bring out the grill pan, which I love to use even if it’s not raining.  This is a great quick meal and once it is marinated (overnight), it only takes 10-12 minutes to grill.  The marinade is especially flavorful and can be served with almost anything, from scalloped potatoes (will post later) or a side salad.

  • 2 1 lb flank steaks
  • 2/3 cup vegetable oil
  • 2/3 cup soy sauce
  • 1/3 cup red wine vinegar
  • 1/4 cup chutney
  • 2 tablespoons finely chopped onions
  • 1/4 teaspoon garlic powder

Trim excess fat from steaks. Score steaks on both sides.

Measure oil in a 2 cup measuring cup, and add rest of the marinade ingredients.

Place steak in large plastic bag and pour marinade into bag.

Seal and refrigerator for 8-12 hours or overnight, turning occasionally.

Remove steaks from marinade. Discard marinade.

Grill, uncovered for 8-10 minutes on each side for medium rare and 12 minutes for medium well.  My husband likes it medium well, therefore these pictures will show it that way.

To serve, cut steaks across grain into thin slices.
