I am all for easy breakfast food, with quick clean up. This is very simple and can be prepared for a large crowd (double the recipe) or just for a couple of people with little preparation. The chiles give it a bit of a kick and the sour cream and cottage cheese keep the eggs fluffy while baking.
1/4 pound cheddar cheese
1/4 pound Jack cheese
1/4 cup flour (sifted)
1 teaspoon baking powder (sifted with flour)
1/4 cup melted butter
1/4 pint cottage cheese
1/4 pint sour cream
2-4 ounces chopped green chilies
Preheat oven 350 degrees
Dice both cheeses and chop chiles and set aside.
Beat eggs and blend in flour and baking powder and butter.
Stir in chilies, cheddar, Jack, cottage cheese and sour cream. Pour into a greased 8×8 baking dish.
Bake 45 minutes to one hour.
Can easily be doubled and put in a 9×13 greased baking dish.
