The anticipation of Santa’s visit on Christmas morning was one of my fondest childhood memories, as it is for many children.   As the years passed and I no longer believed in Santa, the anticipation turned to Christmas morning breakfast, which always included this delicious baked creation of bread, cheese, ham and custard.   I remember one year, my brother had an issue, or I should say tantrum, because that particular year my dad made the strata and he added mushrooms.   Big mistake.  Now in my dad’s defense, my brother hadn’t lived at home for over 10 years, so none of us remembered his dislike of mushrooms.  Thank goodness it was Christmas with presents to open which helped us all take our mind off the mushroom debacle.  Between you and me, and the world wide web, adding mushrooms was perfect.

After years of trying virtually dozens of strata recipes to find the best,  I believe I found the nirvana of strata with this combination.   Depending on your taste, you can always substitute some of the ingredients, but we prefer the combination of sausage, Fontina and shallots (and mushrooms), although one made with bacon,  cheddar and onions is pretty darn good too!!!! 

  • 8-10 slices of sourdough or French bread (1/2 inch thick)
  • 5 tablespoons unsalted softened butter
  • 8 ounces grated Fontina (I like Italian, but domestic will be fine)
  • 3/4 pound Italian sausage – casings removed (mild or spicy)
  • ½ pound mushrooms – sliced (optional, for reasons stated above)
  • 2 shallots (or one small onion) – diced
  • ½ cup white wine
  • 6-8 large eggs
  • 2 cups half and half
  • 1 teaspoon dry mustard

Toast bread in a 350 degree oven for about 10-15 minutes – when cooled butter one side.

Heat butter in nonstick skillet, add sausage and brown and break up.

Add shallots or onions and cook about 3-5 minutes until soft.  Add mushrooms if desired, unless it will cause a tantrum.  Pour in wine and reduce, cooking about 5-10 minutes.

Whisk eggs, half/half and mustard in a large bowl.

Lay bread in a 13X9 greased baking dish (buttered side up), sprinkle with cheese and sausage mixture.

Pour custard evenly over cheese and sausage mixture and cover with plastic.

Weigh it down (I use either boxes of stock which is the perfect size, or cans) and refrigerate overnight.

Take out of the refrigerator about 20 minutes prior to baking and bake at 350 degrees for 50-60 minutes until bubbly and golden on top.

Let it set about 5-10 minutes before serving.
